Triple-Berry Cobbler
This slightly-tart dessert is amazing hot out of the oven and topped with some banana nice cream.
Ingredients
- 2 ½ cups rolled oats
- 2 tablespoons melted vegan butter
- 3 tablespoons maple syrup
- 1 tsp vanilla
- 1 tablespoon cinnamon
- Chopped walnuts (optional)
- 2 cups blueberries,
- 2 cups blackberries
- 2 cups raspberries
- ¼ cup dehydrated apples
Instructions
- Put berries in a 9x13 inch baking dish.
- Break up the dehydrated apples and add to the berries.
- Put the oats in a bowl.
- Combine melted butter, maple syrup, vanilla and cinnamon and stir to combine.
- Pour the butter maple syrup mixture into the oats and stir well to combine.
- Add walnuts at this time if desired and stir in.
- Sprinkle oat mixture on top of berries.
- Cover with a tinfoil and bake until the berries are hot (the apples should absorb most of the liquid).
- Take the foil off for the last 10 minutes to brown the oats.
Notes
- I make this with Costco frozen berrie combination and so it takes a bit of time for the berries to heat up and the apples to absorb the liquid. You can let them defrost a bit before you put it in the oven or just keep the tinfoil tight on the top so it stays moist until you take the foil off to brown. I would give it at least a half hour plus to cook if you are starting with frozen berries.
- Top with vanilla "nice" cream for an amazing taste experience that defies its nutritional goodness.
