Triple-Berry Cobbler

This slightly-tart dessert is amazing hot out of the oven and topped with some banana nice cream. 

Ingredients

  • 2 ½ cups rolled oats
  • 2 tablespoons melted vegan butter
  • 3 tablespoons maple syrup
  • 1 tsp vanilla
  • 1 tablespoon cinnamon
  • Chopped walnuts (optional)
  • 2 cups blueberries, 
  • 2 cups blackberries
  • 2 cups raspberries
  • ¼ cup dehydrated apples


Instructions

  1. Put berries in a 9x13 inch baking dish.
  2. Break up the dehydrated apples and add to the berries.
  3. Put the oats in a bowl.
  4. Combine melted butter, maple syrup, vanilla and cinnamon and stir to combine.
  5. Pour the butter maple syrup mixture into the oats and stir well to combine.
  6. Add walnuts at this time if desired and stir in. 
  7. Sprinkle oat mixture on top of berries.
  8. Cover with a tinfoil and bake until the berries are hot (the apples should absorb most of the liquid).
  9. Take the foil off for the last 10 minutes to brown the oats. 


Notes

  • I make this with Costco frozen berrie combination and so it takes a bit of time for the berries to heat up and the apples to absorb the liquid. You can let them defrost a bit before you put it in the oven or just keep the tinfoil tight on the top so it stays moist until you take the foil off to brown. I would give it at least a half hour plus to cook if you are starting with frozen berries.
  • Top with vanilla "nice" cream for an amazing taste experience that defies its nutritional goodness.
