Turmeric Salad Dressing

Ingredients

  • 1 ½ cups water
  • 3 tsp turmeric
  • ¾ cup cashews
  • 4–8 cloves garlic 
  • 4 tbsp white miso paste 
  • 4 tbsp Dijon mustard
  • ¾ cup lemon juice (Include some zest from the lemon.) 
  • Salt to taste
  • Ground pepper to taste

Instructions

  1. Combine in a blender and mix until smooth. (Note that you may need to soak the cashews in water for 15 minutes or so if you do not have a high-powered blender.)
  2. Chill before serving (optional).
