Soda Bread

This recipe comes from Dr. Alan Desmond, who shared it on this Instagram post. For your convenience, we have included the recipe below.

Ingredients

  • 1 tbsp ground flaxseeds 
  • 600g plain wholemeal flour, plus extra for dusting 
  • 2 tsp bicarbonate of soda
  • ½ tsp sea salt
  • 350 ml of plant-based milk
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup

Instructions

  1. Preheat your oven to 400˚F. 
  2. Mix the ground flax seeds with two tablespoons of water and set them aside to soak for at least ten minutes.
  3. Tip the flour and bicarbonate of soda and salt into a large mixing bowl. Slowly mix using your hands.
  4. Add in half the milk and continue to mix slowly. As the ingredients combine, add the flax seeds, maple syrup and lemon juice. 
  5. Add in the rest of the milk and bring it together into a dough. You may need to more or less plant-based milk depending on the flour you select. 
  6. Make sure you don’t over mix it or knead it or you’ll affect the rise. Use your hands to shape it into a round loaf, adding a bit more flour if it is too wet and sticky.
  7. Sprinkle a layer of flour on your baking tray. Place the loaf on the baking tray and score a deep cross on the top. 
  8. Bake for 25-30 minutes. When the bread is ready, knocking on the bottom of the loaf will make a nice hollow sound. Like knocking on a door!
  9. Leave to cool before serving.
