Soda Bread
This recipe comes from Dr. Alan Desmond, who shared it on this Instagram post. For your convenience, we have included the recipe below.
Ingredients
- 1 tbsp ground flaxseeds
- 600g plain wholemeal flour, plus extra for dusting
- 2 tsp bicarbonate of soda
- ½ tsp sea salt
- 350 ml of plant-based milk
- 1 tbsp lemon juice
- 1 tbsp maple syrup
Instructions
- Preheat your oven to 400˚F.
- Mix the ground flax seeds with two tablespoons of water and set them aside to soak for at least ten minutes.
- Tip the flour and bicarbonate of soda and salt into a large mixing bowl. Slowly mix using your hands.
- Add in half the milk and continue to mix slowly. As the ingredients combine, add the flax seeds, maple syrup and lemon juice.
- Add in the rest of the milk and bring it together into a dough. You may need to more or less plant-based milk depending on the flour you select.
- Make sure you don’t over mix it or knead it or you’ll affect the rise. Use your hands to shape it into a round loaf, adding a bit more flour if it is too wet and sticky.
- Sprinkle a layer of flour on your baking tray. Place the loaf on the baking tray and score a deep cross on the top.
- Bake for 25-30 minutes. When the bread is ready, knocking on the bottom of the loaf will make a nice hollow sound. Like knocking on a door!
- Leave to cool before serving.
