Ranch Dressing

Ingredients

  • 3/4 cup raw cashews or ½ cup cashew butter (or, for a lower-fat option, use 1–2 cups cooked cannellini beans or 1 can of no-salt added cannellini beans)
  • 1 cup plant-based milk
  • ½ tsp apple cider vinegar
  • 1–3 tsp Garlic & Herb seasoning (from Costco) or 1–3 tsp of Mrs. Dash Garlic and Herb seasoning for a no-salt option
  • 1 clove garlic
  • Black pepper to taste
  • ½ lemon juiced and zest to taste
  • 1 green onion
  • Add fresh herbs to taste: parsley and dill (a good combination for a standard ranch dressing), cilantro (for a Mexican flavor), basil (for an Italian flavor)

Instructions

  1. Blend all ingredients in a blender until smooth and creamy.  Refrigerate any unused portion.
     

Additional Notes

  • You may need to soak the whole cashews in water until soft (15-30 minutes) to get a creamy consistency if you do not have a high power blender. 
  • I have used as little as ¼ cup ground cashews and it still is creamy. Cashew butter is a good substitute if you do not have a high speed blender.
