Pritikin-Style Minestrone Soup
This Pritikin-style minestrone is a low-sodium, high-fiber, fat-free/low-fat vegetable soup designed for health.
Ingredients
- 1 large onion, diced
- 2 carrots, diced
- 2 celery ribs, diced
- 1/2 head fennel, diced (optional)
- 1 Tbsp garlic, minced
- 1 quart low-sodium vegetable stock
- 1 quart water (or more stock)
- 14 oz no-salt-added diced tomatoes
- 2 cups cooked chickpeas
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1/2 head cabbage, shredded
- 1 Tbsp dry basil
- 1/2 Tbsp dry oregano
- 1 tsp black pepper
- 1 cup whole-wheat pasta (optional)
Instructions
- Sauté onions, garlic, carrots, and celery in water or broth.
- Add diced tomatoes, vegetable broth, white beans, green beans, and Italian herbs (oregano, basil).
- Simmer until tender.
- Add greens and whole-wheat pasta for a filling, heart-healthy meal.
