Peanut Butter Cookie Balls

Ingredients

  • 3 cups oats (reserve 1 cup for last pulse)
  • ⅓ cup honey
  • 1 tsp Vanilla
  • ½ cup applesauce
  • ½ cup dry peanut butter
  • ½ cup peanuts (reserve for last pulse)
  • Mini chocolate chips (optional add after all pulsing is completed)

Instructions

  1. Add ingredients to the food processor except 1 cup of the oats and the peanuts. 
  2. Pulse the mixture until consistent. 
  3. Add the reserved oats and peanuts and pulse the mixture to your desired texture. 
  4. Roll into balls. If they have a hard time sticking together you can add more applesauce a little at a time.

Notes

  • You can make these with regular peanut butter, but the fat content will be much higher.
  • You can freeze the finished balls to help them retain their shape and freshness.
