Peanut Butter Cookie Balls
Ingredients
- 3 cups oats (reserve 1 cup for last pulse)
- ⅓ cup honey
- 1 tsp Vanilla
- ½ cup applesauce
- ½ cup dry peanut butter
- ½ cup peanuts (reserve for last pulse)
- Mini chocolate chips (optional add after all pulsing is completed)
Instructions
- Add ingredients to the food processor except 1 cup of the oats and the peanuts.
- Pulse the mixture until consistent.
- Add the reserved oats and peanuts and pulse the mixture to your desired texture.
- Roll into balls. If they have a hard time sticking together you can add more applesauce a little at a time.
Notes
- You can make these with regular peanut butter, but the fat content will be much higher.
- You can freeze the finished balls to help them retain their shape and freshness.
