Millet
Millet is a highly nutritious, gluten-free ancient grain and eco-friendly crop that requires little water to grow. It offers a mild, nutty, corn-like flavor and is packed with protein, fiber, antioxidants, and minerals like magnesium and calcium, making it great for heart health and digestion.
Method 1: Instant Pot
- In an Instant Pot, combine 1 cup of rinsed millet with 1 3/4 to 2 cups of water or broth.
- Cook on High Pressure for 8–10 minutes.
- Let it rest for 10 minutes then release any remaining pressure.
Method 2: Stovetop
- Combine 1 cup millet and 2 cups water in a saucepan.
- Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes or until liquid is absorbed and millet is fluffy.
- Fluff with a fork, then cover and let rest for 10 minutes before serving.
Notes
- With its corn-like flavor, millet provides a nice complement to chili. Simply put the desired amount of cooked millet in a bowl and top with your favorite chili.
