Mexican Brown Rice

Nothing like adding a little spice to your rice when serving Mexican food. You can make this rice in an Instant Pot or on the stove.

Method 1: Instant Pot

  1. Rinse 1 cup long grain brown rice to remove excess starch.
  2. Combine 1 to 1 1/4 cup water in an Instant Pot.
  3. Add 1/4 cup salsa.
  4. Pressure cook for 20 minutes.
  5. Allow Instant Pot to release pressure naturally (about 10 minutes). 
  6. Fluff with a fork and serve.

Method 2: Stovetop

  1. Rinse 1 cup long grain brown rice to remove excess starch.
  2. Combine rice with 1 3/4 cups water and 1/4 cup salsa in a saucepan.
  3. Bring to boil, then cover and reduce heat to low and simmer for 35-40 minutes.
  4. Remove from heat and let it sit for 5-10 minutes before serving. 
  5. Fluff with a fork and serve.

Notes

  • Add more or less salsa to taste.
  • You may want toast the rinsed rice in the Instant Pot or saucepan before adding water and salsa. 
  • Keep the same water-to-rice proportions when making larger batches.
