Mexican Brown Rice
Nothing like adding a little spice to your rice when serving Mexican food. You can make this rice in an Instant Pot or on the stove.
Method 1: Instant Pot
- Rinse 1 cup long grain brown rice to remove excess starch.
- Combine 1 to 1 1/4 cup water in an Instant Pot.
- Add 1/4 cup salsa.
- Pressure cook for 20 minutes.
- Allow Instant Pot to release pressure naturally (about 10 minutes).
- Fluff with a fork and serve.
Method 2: Stovetop
- Rinse 1 cup long grain brown rice to remove excess starch.
- Combine rice with 1 3/4 cups water and 1/4 cup salsa in a saucepan.
- Bring to boil, then cover and reduce heat to low and simmer for 35-40 minutes.
- Remove from heat and let it sit for 5-10 minutes before serving.
- Fluff with a fork and serve.
Notes
- Add more or less salsa to taste.
- You may want toast the rinsed rice in the Instant Pot or saucepan before adding water and salsa.
- Keep the same water-to-rice proportions when making larger batches.
