Ingredients
- 1 ½ cups brown or green lentils rinsed
- 2 onions (small or 1 large) chopped
- 6 cloves garlic minced
- 2 bell peppers (I prefer red, yellow or orange for their sweet taste). Green peppers give a different flavor.
- 2 cups tomatoes or 1 can diced tomatoes (14.5 oz)
- 1 ½” piece of Ginger minced
- 1 to 1 ½ Tbsp curry powder
- 1 Tbsp cumin
- 1 Tsp paprika
- 2 sweet potatoes chopped into ½-1”cubes (approximately 2 lbs)
- Vegetable broth to cover all ingredients
Instructions
- Combine all ingredients in an Instant Pot and cover with the vegetable broth.
- Cook for 12-15 minutes.
- Release any pressure after 15-20 minutes.
Notes
- Adjust ginger, curry, cumin or paprika to your own individual taste preference.
- This makes about 12-14 cups of soup.
