Faux Cheese Sauce

Ingredients

  • 2 cups potatoes, diced small
  • 1 cup carrots, diced small
  • ½ cup reserved potato water
  • ⅓ cup raw cashews (or, for a lower-fat option, use 1–2 cups cooked cannellini beans or 1 can of no-salt added cannellini beans)
  • ½ tsp salt
  • ¼  tsp black pepper
  • ½ cup nutritional yeast
  • 1 tsp white miso paste (or 1 tsp apple cider vinegar)
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp turmeric (optional for color and nutrition)
  • 1 vegetable bouillon cube (optional, depending on desired sodium level)
  • ½ jalapeno pepper, deseeded

Instructions

  1. Boil the potatoes, carrots, and cashews for about 10 minutes or until the vegetables are soft.
  2. Drain the mixture and reserve the potato water.
  3. Blend the potatoes, carrots, cashews, start with ½ cup of the reserved potato water (adding more as needed) with the remaining ingredients together until smooth.

Serving Suggestions

  • Serve with tortilla chips.
  • Pour over a bean and rice bowl.
  • Use in a potato bar.
  • Pour over steamed vegetables.
