Faux Cheese Sauce
Ingredients
- 2 cups potatoes, diced small
- 1 cup carrots, diced small
- ½ cup reserved potato water
- ⅓ cup raw cashews (or, for a lower-fat option, use 1–2 cups cooked cannellini beans or 1 can of no-salt added cannellini beans)
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup nutritional yeast
- 1 tsp white miso paste (or 1 tsp apple cider vinegar)
- ¼ tsp onion powder
- ¼ tsp garlic powder
- 1 tsp chili powder
- ½ tsp turmeric (optional for color and nutrition)
- 1 vegetable bouillon cube (optional, depending on desired sodium level)
- ½ jalapeno pepper, deseeded
Instructions
- Boil the potatoes, carrots, and cashews for about 10 minutes or until the vegetables are soft.
- Drain the mixture and reserve the potato water.
- Blend the potatoes, carrots, cashews, start with ½ cup of the reserved potato water (adding more as needed) with the remaining ingredients together until smooth.
Serving Suggestions
- Serve with tortilla chips.
- Pour over a bean and rice bowl.
- Use in a potato bar.
- Pour over steamed vegetables.
