Apple-Raisin Cookie Balls

Ingredients

  • 1 tbsp cinnamon
  • 2 cups oats (reserve ½ cup for the last pulse)
  • ½ cup raisins
  • ½ cup applesauce
  • 1 tsp vanilla
  • 1 tbsp maple syrup
  • 1 cup dried apples (reserve ¼ to ½ cup). I use the ones from the bishop's storehouse. They are very dry and crunchy.
  • ½ cup walnuts (reserve for last pulse)

Instructions

  1. Add all ingredients to the food processor if you don’t mind it all pulverized. I prefer to reserve ½ cup oats, ¼ cup dried apples and the walnuts and add them at the end for a bit more texture. 
  2. Roll into balls. If they have a hard time sticking together you can add a bit more applesauce a little at a time.

Notes

  • You can freeze the finished balls to help them retain their shape and freshness.
